I am inundated with yellow beans and zucchini, so I am needing to make something quick. I also need to be glazing pottery and making more pottery. Yikes, summer time and the living is busy!
This recipe comes from a friend whose mom has passed away, but we both fondly remember eating these bean pickles at every holiday celebration all through the year. They are bright and yummy!
Yellow Bean Pickles
This is it:
> Cut yellow beans in small pieces.
> Cook in water until tender. (doesn't say how many beans)
Dressing:
> 1 1/2 cups of white sugar
> 1/4 cup flour
> 2 tbsp dry mustard
> 1 tsp celery seed
> 1 tsp turmeric
> 1 1/2 cups vinegar
> Boil until thick (in a large pot). Add cooked beans simmer until beans are very hot. And well mixed with sauce. Seal in jars
If you have a lot of beans you could double the dressing recipe.
