Foodie Friday - Thai Inspired Lime-Peanut Chicken
Jennifer of BlueCamelbaby here with a tasty, clean-eating (whole foods, reduced processing) recipe!
Recently I tried a “clean eating” recipe for Thai Chicken and, well, it needed work as dried spices and lime juice alone hold the peanuts on. So, with basic improvements, it is now a tasty Thai-inspired treat.
Ingredients
2 tbsp lime juice
Zest of 1/2 lime (optional)
1 1/2 tbsp grated garlic or garlic paste
1 1/2 tbsp grated ginger or ginger paste
1 tbsp natural peanut butter
Chilli paste / red pepper flakes / cayenne pepper, to taste
3/4 cup salted roasted peanuts, chopped
5-6 skinless chicken thighs or 2 skinless boneless chicken breasts
Method
Preheat oven to 350°F.
Mix juice, garlic, ginger, peanut butter, chilli paste and zest together. Coat chicken in sauce, then roll in chopped peanuts.
Bake for 20-30 minutes for chicken breasts and 50-60 minutes for thighs.
Use your meat thermometer to check the chicken is done.
