Foodie Friday : Rhubarb Platz

What could be more Manitoba than Rhubarb Platz? Especially as a Summer picnic or potluck dessert!




Serving: 20 - 10x15 inch pan
Preheat oven to 350˚F



Ingrediants


Base

2 cups flour
1 cup sugar
2 14 teaspoons baking powder
12 cup softened butter
1 cup milk
2 eggs
12 teaspoon almond flavoring
4 cups chopped rhubarb

Crumb Topping

1 cup flour
1 cup sugar
13 cup melted butter

Directions

Base
Mix flour, sugar, baking powder and rub in the butter to make a "meal" appearance.


Beat together milk, eggs and almond flavoring.


Mix these two mixtures together. (Will be lumpy) 
Spread into a 10 x 15 inch pan that is either greased or lined with parchment paper and cover with rhubarb.


Topping
Mix together the flour, sugar and melted butter.
Sprinkle crumbs on top of the rhubarb.
Bake at 350 deg. for 40 minutes. Do not over-bake, check it at 35 minutes to see if there is golden brown edges already.

  1. Wonderful! This was a favourite childhood dessert. My grandmother would make it with raspberries from her garden, and my mother would use sour plums from our tree (on the rare years that it would bear fruit). To my taste, this should always be made with a tart fruit, so rhubarb is the perfect choice.
